INGREDIENTS
- 180g of cashew nuts
 - 1 yellow onion
 - 2 cloves of garlic
 - 1 tbsp ginger
 - 1 tbsp tomato paste
 - 2 tbsp curry powder
 - 1 tsp turmeric
 - 1/2 tsp cumin
 - 1 tsp salt
 - 1 tbsp sugar or honey
 - 1 diced potato
 - 2 carrots, sliced
 - 2 cups of vegetable broth
 - 1 cup of coconut milk
 
INSTRUCTIONS
- Sauté the onion, garlic, ginger, and spices. Add the chika, tomato paste, and sugar. Mix.
 - Add broth, coconut milk, potatoes, carrots.
 - Simmer uncovered until tender (~20 min).
