INGREDIENTS

  • 180g of cashew nuts
  • 1 yellow onion
  • 2 cloves of garlic
  • 1 tbsp ginger
  • 1 tbsp tomato paste
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp salt
  • 1 tbsp sugar or honey
  • 1 diced potato
  • 2 carrots, sliced
  • 2 cups of vegetable broth
  • 1 cup of coconut milk

INSTRUCTIONS

  1. Sauté the onion, garlic, ginger, and spices. Add the chika, tomato paste, and sugar. Mix.
  2. Add broth, coconut milk, potatoes, carrots.
  3. Simmer uncovered until tender (~20 min).
